Located in downtown Midland, TX, Pachuco's stands out as one of the best. The murals inside and out are stunning, and the staff is incredibly welcoming. The atmosphere is just right, and when it comes to BBQ in Texas, this place really knows its craft. The brisket has a unique spice profile, and every dish is well-prepared. Each taco has its own distinct character, and the jalapeño sausage might just be the best I've ever had. Even the sweet tea has a special touch that makes it their own.

The menu is a true celebration of Mexican cooking, offering a variety of dishes for adventurous eaters and those who prefer more traditional flavors. I started with their signature street tacos, which may be small, but are bursting with flavor. The Al Pastor, marinated in a rich blend of spices, was incredibly tender and paired perfectly with the tangy sweetness of pineapple. Each plate includes 1/2 pound of meat, a generous side, and a piece of Texas toast—all for just $10. The brisket was the best I’ve had in Midland/Odessa, and the Pachuco BBQ sauce? I could put it on everything. The turkey was seasoned perfectly and tender, while the potato salad had a unique twist. One standout dish was their mole enchiladas, a true labor of love. The mole sauce was rich and complex, with smoky, sweet, and spicy layers that created an unforgettable flavor. The chicken was juicy and well-seasoned, perfectly complementing the sauce. You don’t often find mole this well-executed, and it’s clear the chefs at Pachuco’s take great pride in perfecting these traditional recipes.

For something lighter, the ceviche was an excellent choice. Fresh, zesty, and vibrant, it was the perfect palate cleanser after the heavier dishes. The fish was marinated to perfection with just the right amount of citrus and served with crispy tortilla chips for a satisfying crunch. Light yet packed with bold flavors, it’s a must-try for any seafood lover. The restaurant’s decor and art also stand out, adding to its one-of-a-kind feel. The menu offers so many options that it’s hard to choose, but I tried the sticky ribs, which had a subtle sweetness and a nice kick—they practically fell off the bone. My husband tried the BBQ, and it was equally delicious. The fusion of Texas, Mexican, and Asian influences is visible throughout the restaurant and menu.

I couldn’t decide what to try, so I ordered one of every taco—and each one was packed with its own distinct, flavorful identity. The brisket is a definite hit—tender, with great seasoning.
